"Sushi" or "sashimi-grade" are common terms used to identify seafood considered "ready to be eaten raw." However, there is no official, regulated standard for these terms. Typically, "sushi-grade" means that the fish is a high-quality product that can be consumed raw.

Consuming raw or undercooked seafood or shellfish may increase your risk of foodborne illness. The FDA recommends cooking your seafood to an internal temperature of 145°F for 15 seconds.
