High levels of histamines can lead to Scombroid poisoning. The primary cause is fish that is handled improperly and held at temperatures above 40∘F. This risk is typically higher in darker-meat fish such as tuna and mackerel. As with all of our seafood, we source from high-quality purveyors focused on maintaining strict temperature integrity throughout the supply chain.
