Carbon monoxide treatment is often used to make fish look great. However, none of the fish we offer are carbon monoxide treated. Currently we maintain the color by storing products that are susceptible to oxidation for limited amounts of time and as much of that time in a super freezer at cryogenic temperature as possible after cryogenically freezing them.
There's nothing inherently wrong with treating fish with carbon monoxide as it doesn't influence the taste and only influences the appearance. Where we have seen issues with carbon monoxide treatment is when purveyors try to pass off low quality seafood as high quality by influencing the appearance. Luckily, you can't fool our experts!
