In short, because your fish hasn't even been landed yet. M-F the freshest catch arrives at the Fulton Fish Market by midnight and is sold by 7am to some of the best restaurants in the world...AND YOU! Once you place your order, our fishmongers personally head out into the market at 1am to select your fish from the latest catch. As an example, if you are shopping on Wednesday, the first available delivery day will be on Friday even though we ship overnight. Here's why... the product arrives at the market late Wednesday night or early Thursday morning > We hand select and cut your fish > We ship your fish on Thursday > It ships overnight and arrives to you on Friday > Enjoy!
