Because we want to ensure you receive the best quality and ensure you have access to the widest variety of seafood. The Fulton Fish Market operates Monday - Friday between 1am - 7am EST, so any fresh product delivered to you on a Monday would have come out of the water and to the market the prior week. That's plenty fresh for most seafood vendors, but not for us.
